Assembly Pizza Co. Arrives in University City with Craft and Character

The start of the new year brings with it a major culinary moment in Philadelphia’s University City: the highly anticipated grand opening of Assembly Pizza Co. at Gather Food Hall in Schuylkill Yards. Officially opening its oven doors on January 1, 2026, Assembly Pizza Co. becomes the sixth and final vendor to complete the food hall’s diverse and dynamic lineup. As one of the city’s first restaurant debuts of the year, this concept is anything but ordinary. It’s rooted in craftsmanship, community, and culinary care—a vibe that instantly feels right at home in Philly.

Helmed by hospitality pro Caleb Walcott, Assembly Pizza Co. is a tribute to the art of building something with your hands. This isn’t your average pizza joint. Walcott’s inspiration comes from his roots in a family of makers, woodworkers, and metalworkers, and that passion for precise assembly translates directly to his food.

“This is a city built by makers and doers, and Assembly reflects that same spirit, with our quality-focused ingredients and attention to detail,” Walcott says. “I’m excited to start serving the local community, and visitors to Philadelphia, too.” With that vision, Assembly Pizza Co. brings a fresh edge to the food scene—one that honors tradition but doesn’t shy away from innovation.

Assembly Pizza Co. Delivers Flavor with Intentionality

Every detail on the Assembly Pizza Co. menu speaks to a deep respect for the craft of cooking. Their signature dough blends premium Pacific Northwest flour with high-grade Italian flour, fermented for flavor and finesse. The result? A crust that’s crispy yet airy, chewy yet light—exactly the kind of thoughtful base that elevates every slice. Expect classic pies alongside seasonal specials, all built on the philosophy of balance, simplicity, and standout ingredients.

But it’s not just about pizza. The Assembly experience extends to crave-worthy comforts like Assembly Fries, a stacked chicken parmesan sandwich, mozzarella sticks made in-house, and a hearty Italian chopped salad. Even the sauces are house-made, rounding out a menu that feels both nostalgic and new. For a sweet finish, guests can enjoy creamy scoops of local Cocco’s Gelato, bringing Philly flair full circle.

Assembly Pizza Co. joins a curated vendor roster at Gather Food Hall, including fan favorites like Federal Donuts & Chicken, Mucho Perú, Sahbyy Food, El Mictlan, and Bowl’d Masala. With the full-service Bulletin Bar on-site offering handcrafted cocktails, wine, and draft beer, it’s a well-rounded, elevated food hall experience perfect for grabbing lunch, meeting after work, or hosting a casual dinner that still feels intentional.
